The secret to the finest turkey burgers is to add mushrooms! These burgers are cooked using lean ground turkey, which implies they are healthful, but it doesn’t assist with keeping the burgers wet and juicy.

    Garlic and ketchup enhance the flavor of the hamburgers. It may seem strange to add ketchup, but it packs a tonne of flavor – it’s sweet, acidic, and adds color. When I have this homemade ketchup in the refrigerator, I enjoy using it frequently.
    I refer to fish sauce and Worcestershire sauce as flavor enhancers. I employ them frequently in our recipes. They add an explosion of taste.

    I love how simple the method for these burgers is. Here’s the step-by-step:

    First, prepare and cook the mushrooms. Herein lies the bulk of your preparation time. We need to mince the mushrooms very finely so that they disappear into the ground turkey. They are chopped by hand, but a food processor makes short work of them. After chopping them, I sauté them in a skillet with olive oil, salt, and pepper. After eight to ten minutes, the mushrooms will have discharged superfluous water and shrunk significantly.

    Enhance the flavor of the burger mixture by adding garlic, ketchup, and either Worcestershire sauce or fish sauce.

    Combine the mushrooms and ground turkey in the third step. After the mushroom mixture has cooled, I incorporate it gently into the ground turkey.

    Our recipe for turkey burgers yields four substantial patties. I have even made these into miniature hamburgers.

    Optional Step: Check the seasoning before creating patties. To test the seasoning of the burger mixture, place roughly a spoonful of the mixture in a hot skillet and allow it to cook completely. Determine whether or not the burgers require a bit more salt by tasting a mini-patty and determining whether or not the burgers require additional salt. If so, shape the meat into patties and lightly season both sides with salt before frying.

    YOU WILL NEED

    • 1 1/2 tablespoons olive oil
    • 6 ounces mushrooms, trimmed and very finely chopped
    • 2 garlic cloves, finely minced
    • 1 tablespoon fish sauce or Worcestershire sauce
    • 1 1/2 tablespoons ketchup, see our homemade ketchup recipe
    • 1 pound lean ground turkey, 93% lean preferred
    • Salt and fresh ground black pepper

    DIRECTIONS

    • In a large skillet, heat 1 tablespoon of olive oil over medium-low heat. Add the mushrooms, a quarter teaspoon of salt, and a quarter teaspoon of pepper. Cook for around 10 minutes, or until the mushrooms release their liquid and it boils away.
    • Stir in the garlic and heat until fragrant, about 1 minute. Remove the skillet from the heat and add the fish sauce (or Worcestershire sauce) and ketchup, stirring to combine. Reserve until warm, but not hot.
    • Combine the mushroom and garlic mixture with the ground turkey in a gentle manner. The mixture may be a little sticky. In order to test the seasoning, heat a pan over medium heat and add one tablespoon of the burger mixture. Cook for one to two minutes, turning once until completely cooked. Try the little patty. If the turkey burger patties look underseasoned, you can season them with a little salt right before cooking.
    • Four-fold the turkey mixture into patties (or more for smaller burgers). Employ a swift and gentle touch. If you believe they require it, season both sides lightly.
    • Medium-heat a half tablespoon of olive oil in a broad nonstick skillet. Add the patties and cook for 4 to 5 minutes per side, or until an internal thermometer inserted into the center of a patty registers 165 degrees F. Transfer to a platter and allow rest for 5 minutes, lightly covered with foil. Serve.
